In order to change the speed of a previously sailed port or legs of a voyage you must rollback the voyage to the desired leg. To do so you must do the following:

Start from the most recent port > delete port activities > delete activity report (Includes bunkers received if present)

Perform the above until reaching the desired leg of the voyage

Change the speed of the leg
